How We Got Six Meals for our Family of Six out of One Beef Roast

One roast doesn’t always look like much when you pull it out of the freezer — especially when you’re feeding a family of six.

So I decided to put it to the test.

My husband challenged me to make 3 meals from one roast for our family of six, and we added a small incentive just for fun. If I could pull it off, I’d get flowers — which, in our house, means flower seeds, not cut flowers.

Then I got to work.

Why This Matters for Families

One common question is:

How One Roast Became Six Full Meals

Here’s what this looked like in real life.

From one beef roast, I made three different meals.
Each of those meals fed our family of six twice — once as the main dinner, and once as leftovers.

That’s six complete meals from one roast.  The roast was cooked low and slow until it was tender.

Meal 1 (and Meal 2: Leftovers)

I made homemade noodles using my grandma's recipe (and a pasta maker to speed things up).  I then used some of the juices from cooking the roast and made a big batch of beef and noodles and served them over mashed potatoes.  The leftovers were repurposed into a second meal later in the week, so it didn’t feel like a repeat.

Meal 3 (and Meal 4: Leftovers)

Another chunk of the roast was used in Veggie Beef Soup. Same roast, new format, and enough food for another two family dinners.

Meal 5 (and Meal 6: Leftovers)

What was left of the roast became a third distinct meal — again feeding all six of us, with leftovers for one more night.  For this meal (and it's corresponding leftovers), I made Taco Soup.

Three different meals.
Six total dinners.
One roast.


Why Roasts Are One of the Most Practical Cuts

Roasts don’t always get the attention that steaks or ground beef do, but for families, they’re one of the hardest-working cuts you can buy.

They:

  • Stretch further than most people expect
  • Work well for batch cooking
  • Reheat and repurpose easily
  • Make meal planning simpler, not more complicated

When you’re feeding real people on real schedules, those things matter.


The Real Win

Yes, I got the flower seeds.

But the real win was knowing that one roast fed our family well for days without feeling repetitive or complicated.
